One of the most common questions we get from people planning a catered asado is: which cuts should I choose? The answer depends on your event, your guests and how long you have to cook. Here's how to think about it.

## For a Corporate Lunch — Keep it Accessible

Corporate guests aren't always familiar with Argentine cuts. For a corporate setting, go with cuts that are universally loved and easy to serve:

Entraña (skirt steak) — cooks fast, incredibly flavourful and always gets a great reaction. Bife de chorizo (sirloin) — the crowd pleaser. Rich, tender and familiar enough for guests who haven't tried Argentine BBQ before. Chorizos and provoleta to start — no one says no to these.

## For a Wedding — Go All Out

A wedding is the occasion to pull out all the stops. Vacío with the full fat cap, asado de tira low and slow, entraña as the fast cut and a full achuras spread to welcome guests as they arrive. Plan for 500-600g per person and give yourself plenty of time.

## For a Birthday Party — Mix it Up

Birthday parties benefit from variety. A mix of slow cuts and fast cuts keeps the grill interesting and means guests at different stages of hunger are always catered for. Start with chorizos, add asado de tira early, and finish with entraña for the main event.

## For a Large Group — Plan for Scale

The bigger the group, the more important it is to choose cuts that are forgiving. Vacío and asado de tira both hold well after cooking — they stay juicy even if they rest for 20-30 minutes while you're serving. Entraña should always be served immediately.
