How to Host a Spring Asado — Entertaining Outdoors on Sydney's Northern Beaches
Spring in Sydney is made for outdoor entertaining. The weather warms up, the days get longer and there's no better excuse to fire up the grill and gather people around a proper Argentine asado.

## The Setup
Spring weather on the Northern Beaches can be unpredictable — warm and sunny one moment, breezy the next. Plan for it.
Set up your grill in a spot that's sheltered from the wind if possible. A good position makes a huge difference to the consistency of your fire and the quality of your cook. If you're in your backyard, use a fence or wall as a windbreak.
Give yourself space. A proper asado needs room — for the grill, for the table and for guests to gather around. The communal experience of standing around the fire is part of what makes an asado special.
## The Fire
Light your charcoal at least 45 minutes before you want to start cooking. Spring days are warmer than winter, which means the coals will reach temperature faster — but don't rush it. You want white-hot coals with no visible flames before anything goes on the grill.

## The Menu
Spring is the perfect time for a mix of slow cuts and fast cuts. The evenings are still cool enough to enjoy a long, slow cook — but warm enough to eat outside comfortably.
**The starter:** Chorizos and provoleta on the grill as guests arrive. While everyone is getting settled and the main cuts are taking their time, these keep the energy high and the hunger at bay.
**The main event:** Vacío for the long cook — fat cap up, 60-80 minutes over medium heat. Entraña for the fast cut — 3-4 minutes each side on a very hot part of the grill, served immediately.
**The accompaniments:** Chimichurri, crusty bread, a simple green salad and some good wine. Keep the sides simple — the meat is the star.

**2 hours before:** Light the charcoal.
**1 hour 30 before:** Vacío goes on.
**30 minutes before:** Chorizos and provoleta on.
**15 minutes before:** Entraña goes on.
**Serving time:** Everything comes together.
