## Argentine Chorizo vs Spanish Chorizo — What's the Difference?

The name is the same but the product is completely different.

Spanish chorizo is a cured, dried sausage made with smoked paprika — the kind you'd slice and eat on a charcuterie board. It's firm, dry and doesn't need cooking.

Argentine chorizo (chorizo criollo) is a fresh sausage made with coarsely ground pork and beef, seasoned with garlic, herbs and spices. It's raw, it needs to be cooked on the grill, and when it's done right it's one of the great pleasures of Argentine BBQ.

## What Goes Into an Argentine Chorizo?

Traditional Argentine chorizo criollo is made with a mix of pork and beef — usually around 70% pork, 30% beef. The meat is coarsely ground, which gives it a rustic texture and keeps it juicy when it hits the grill.

The seasoning is where the magic happens: garlic, black pepper, oregano, cumin and a touch of chilli. Nothing overpowering — the goal is to complement the meat, not mask it.

## How to Cook Argentine Chorizos

The key word is patience — and indirect heat.

**Don't cook them over direct high heat.** This is the most common mistake. High heat will split the casing and dry out the inside before the centre is cooked.

**The right method:**
1. Place chorizos on a medium grill, not directly over the hottest coals
2. Turn every few minutes
3. Cook for 20-25 minutes until golden brown all over and cooked through
4. Don't rush them — low and slow is the way

**The choripán:** Once they're done, slice them open lengthways and serve in a crusty bread roll with chimichurri. This is the choripán — Argentina's greatest contribution to street food. Don't skip the chimichurri.
