## Asado de Tira — Beef Short Ribs

Asado de tira is the king of the winter slow cook. These beef short ribs, cut across the bone the Argentine way, need at least 60-75 minutes over low charcoal heat to reach their potential.

The process is simple: bone side down, low heat, patience. The collagen in the connective tissue slowly breaks down, the fat renders, and the meat becomes so tender it falls off the bone with minimal effort.

The result is one of the great pleasures of Argentine cooking — and it's at its best in winter, when the fire feels more necessary and the long cook is part of the experience.

**How to cook it:** Light your charcoal 45 minutes before you start. Place ribs bone side down over low heat. Cook for 60-75 minutes, turning only once at the halfway point. Season with nothing but coarse salt.

## Vacío — Flank Steak

Vacío is another cut that rewards patience. The thick fat cap on top slowly renders over 60-80 minutes, basting the meat throughout and keeping it incredibly juicy all the way through.

**How to cook it:** Fat side up for the first 40 minutes, then flip for 20-30 minutes meat side down, then finish fat side up for a final 10 minutes to crisp the cap. The result is a juicy, tender cut with an incredible crust on the fat.

## Osobuco — Beef Shin

Osobuco is less traditional at an Argentine asado but absolutely deserves a place at the winter table. The beef shin, braised low and slow in red wine, stock and aromatics, is one of the great winter dishes.

This one moves off the grill and into a pot — a heavy-based casserole or Dutch oven over low heat for 2-3 hours until the meat is falling off the bone and the sauce has reduced to something rich and glossy.
