## 1. Entraña (Skirt Steak)
If we had to pick just one cut, this would be it. Entraña is thin, intensely flavourful and cooks in minutes — which makes it perfect for when your guests are hungry and you need something on the table fast.
The key: hot grill, 3-4 minutes each side, medium rare. Slice against the grain and serve immediately. Simple, fast and absolutely delicious. It's the cut that converts people to Argentine BBQ every single time.
## 2. Vacío (Flank Steak)
Vacío is Argentina's most beloved cut and for good reason. It comes with a beautiful fat layer on top that bastes the meat as it cooks, keeping it juicy and full of flavour throughout.
It takes patience — 45 minutes to an hour on a medium grill — but the result is worth every minute. Crispy fat cap on the outside, tender and juicy on the inside. Once your guests try it, they'll be asking for it every BBQ.
## 3. Asado de Tira (Beef Short Ribs)
Asado de tira is the centrepiece of any Argentine asado. Cut across the bone in thin strips, these ribs cook low and slow over charcoal until the meat falls off the bone.
